A truly great BBQ meatball isn’t just a vehicle for sauce—it needs a tender interior, a seasoned “bark,” and a glaze that sticks to the ribs. Whether you’re making these for a game-day appetizer or a hearty weeknight dinner, the secret lies in the blend of meats and the gentle cooking process that prevents them from drying out.

Ultimate BBQ Meatballs

The Perfect Balance of Smoke, Spice, and Sweetness
Prep Time 20 minutes
Cook Time 30 minutes
Servings: 8 People
Course: Appetizer
Cuisine: Southern

Ingredients

  • 1 lb Ground Beef 80/20 fat content
  • 1 lb Ground Pork
  • 1 cup Panko Breadcrumbs soaked in 1/4 cup whole milk
  • 1 Large Egg beaten
  • 2 tbsp BBQ Dry Rub your favorite blend
  • 1/2 small Onion finely grated
  • 2 cups BBQ Sauce for glazing
  • Fresh Parsley for garnish

Method

Preparation
  1. Mix: Combine all ingredients (except the glaze) in a large bowl. Mix gently by hand until just combined—do not overwork.
  2. Shape: Form into 1.5-inch balls (roughly golf ball size) and place on a wire rack set over a baking sheet.
Baking & Glazing
  1. Initial Bake: Bake at 375°F (190°C) for 15-20 minutes until the exterior is browned and set.
  2. The Glaze: Remove from the oven and brush generously with BBQ sauce. Return to the oven for 10 more minutes until the sauce is tacky and caramelized.
  3. Garnish & serve warm

Notes

Pro Tip: Using a wire rack allows the hot air to circulate under the meatballs, preventing them from sitting in their own grease and getting soggy.
Storage Tip: These freeze beautifully! Freeze them after the initial cook but before the glaze. Reheat and glaze whenever you need a quick snack.
