While pulled pork gets the glory, a properly executed BBQ pulled chicken is a Southern treasure. The challenge is moisture—chicken lacks the heavy fat of a pork shoulder, so we use a blend of dark and white meat along with a “low and slow” approach to ensure every strand is juicy. Whether you’re using a backyard smoker for that authentic bark or a slow cooker for a weekday win, this chicken is the perfect vessel for your favorite tangy BBQ sauce.

Ultimate BBQ Pulled Chicken Sandwiches

Tender, Smoky, and Dripping with Pitmaster Flavor
Prep Time 20 minutes
Cook Time 6 minutes
Servings: 10 Sandwiches
Course: Main Course
Cuisine: Southern

Ingredients

  • 3 lbs Chicken mixed thighs and breasts
  • 1/4 cup Brown Sugar
  • 2 tbsp Smoked Paprika
  • 1 tbsp Garlic Powder & Onion Powder
  • 1 tbsp Kosher Salt & Coarse Black Pepper
  • 1/2 tsp Cayenne Pepper (optional for heat)
  • Hog Wild BBQ Sauce
  • Potato Rolls
  • Creamy Coleslaw
  • Bread & Butter Pickles

Method

Preperation
  1. The Dry Rub: Combine all dry spices and sugar. Pat the chicken completely dry and coat every inch generously. Let it sit for 30 minutes at room temperature.
  2. Fire it up: Preheat your smoker to 225°F using fruitwood (apple or cherry) for a sweeter, milder smoke that doesn't overpower the poultry.
Smoking Process
  1. The Cook: Place chicken on the grates. Smoke for 2.5 to 3 hours until the internal temperature reaches 165°F.
  2. The Wrap: For extra moisture, wrap the chicken in foil with a splash of apple juice for the final 30 minutes of the cook.
  3. The Shred: Remove from smoker and let rest for 15 minutes. Use two forks or "bear claws" to shred the meat while it's still warm.
  4. Mix with BBQ sauce and juices
  5. Serve on toasted rolls with slaw

Notes

Pro Tip: Toss the shredded meat with a tiny bit of the "pan drippings" or apple juice before adding your BBQ sauce. This creates an emulsion that keeps the meat hydrated.
Storage Tip: Pulled chicken freezes beautifully! Store in airtight bags with a little extra sauce for up to 4 months. Reheat in a covered dish with a splash of water to maintain moisture.
