Course: Appetizer
Cuisine: Southern

Ingredients

  • 1 can Black-Eyed Peas rinsed and drained
  • 1 can Black Beans rinsed and drained
  • 1 1/2 cups Sweet Corn fresh, frozen, or canned
  • 2 Large Roma Tomatoes seeded and diced
  • 1 Large Bell Pepper orange or red, finely diced
  • 1/2 Red Onion finely diced
  • 1-2 Jalapeños seeded and minced
  • 2 Ripe Avocados diced—add just before serving
  • 1 bunch Fresh Cilantro chopped
Dressing
  • 1/3 cup Olive Oil
  • 1/4 cup Lime Juice
  • 2 tbsp Red Wine Vinegar
  • 1 tbsp Honey (or sugar)
  • 1 tsp Cumin
  • 1 tsp Chili Powder
  • Salt & Pepper to taste

Method

Preperation
  1. Prep the Base: In a very large mixing bowl, combine the drained black-eyed peas, black beans, corn, bell pepper, red onion, tomatoes, and jalapeños.
  2. Whisk the Dressing: In a small jar or bowl, vigorously whisk together the olive oil, lime juice, vinegar, honey, cumin, chili powder, salt, and pepper until emulsified.
  3. Marinate: Pour the dressing over the bean mixture. Toss gently but thoroughly to ensure every piece is coated. Cover and refrigerate for 1-4 hours.
Serving Process
  1. The Avocado Step: Just before walking out the door or serving, gently fold in the diced avocado and fresh cilantro. Adding avocado too early leads to browning and mushiness.
  2. Final Taste: Give it one last stir. The beans will have absorbed some salt, so you may need a final pinch of salt or a squeeze of fresh lime to brighten it back up.
  3. The Vessel: Serve in a wide bowl with sturdy, salty tortilla chips (scoops are highly recommended!).

Notes

Pro Tip: For the best "dip" experience, dice all your vegetables to be roughly the size of a black bean. This ensures you get a little bit of everything in every single scoop!
Storage Tip: Leftovers stay fresh in the fridge for up to 3 days. The avocado will brown slightly, but the flavor will actually continue to deepen!
