Cuisine: Southern

Ingredients

  • 12 Large Eggs
  • 1/2 Cup Mayo
  • 3/4 Cup Sharp Cheddar Shredded
  • 1/4 Cup Pimentos
  • 2 oz Cream Cheese softened
  • 1 tsp Dijon Mustard
  • 1/2 tsp Smoked Paprika
  • 1/2 tsp Garlic Powder
  • Salt & Black Pepper to taste
  • 4-6 slices Thick Sliced Bacon cook until extra crispy. Use grinder to create fine crumbs
Candied Jalapenos
  • 4-6 Jalapenos sliced into rings
  • 1/2 Cup Sugar
  • 1/2 Cup Apple Cider Vinegar
  • Pinch Salt

Method

Candied Jalapeños (Make 1 Day - 2 Weeks Ahead)

  1. Bring sugar, vinegar, and salt to a simmer in a small saucepan until sugar dissolves.
  2. Add jalapeño slices; simmer 4–5 minutes until slightly softened but still bright.
  3. Remove from heat, cool in syrup, then drain and refrigerate (up to 2 weeks). Use leftovers on burgers or sandwiches.

Bacon Dust

  1. Cook bacon until extra crispy. Cool completely.
  2. Blitz in a mini food processor or spice grinder to fine crumbs (not powder—keep some texture). Store airtight.

Deviled Eggs

  1. Hard-boil eggs: Place in pot, cover with cold water, bring to boil, then simmer 9–10 minutes. Ice bath 10 minutes. Peel carefully.
  2. Halve eggs lengthwise. Gently remove yolks to a bowl.
  3. Mash yolks finely. Add mayo, cream cheese, shredded cheddar, pimentos, Dijon, smoked paprika, garlic powder, salt & pepper. Mix until ultra-smooth and creamy (use hand mixer for fluffiest texture).
  4. Taste and adjust seasoning—should be boldly cheesy/tangy/smoky.
  5. Pipe or spoon filling into whites (overfill slightly for dramatic look).
  6. Top each with 1–2 candied jalapeño rings, a light dusting of bacon dust, extra smoked paprika, and optional chive snips.

Notes

Storage Tip: Assemble up to 4 hours ahead and refrigerate uncovered. Best eaten same day for crisp bacon dust.
