You Do Not Need a Whole Day
Somewhere along the way, grilling got associated with weekend projects. Big briskets, all-day smokes, elaborate setups. I love those cooks. But if you think grilling only makes sense when you have eight free hours, you are missing the best part. Some of the best meals I have ever made on the grill took less than thirty minutes from lighting the fire to sitting down with a plate.
Weeknight grilling is about fast-cooking proteins, minimal prep, and flavors that beat anything you could microwave or stir-fry in the same amount of time.
The Setup: Keep It Simple
For a quick weeknight cook, I use a half chimney of charcoal (about 40 briquettes). That lights in 12 to 15 minutes, burns hot enough for searing, and lasts about 45 minutes. More than enough for a fast cook. Gas grill? Even easier. Turn it on, preheat for 10 minutes, cook.
While the grill preheats, prep the food. The goal is to have everything seasoned and ready to go the moment the grill is hot.
Five Weeknight Winners
Chicken Thighs (20 minutes)
Bone-in, skin-on chicken thighs are the most forgiving protein on the grill. Season with salt, pepper, and garlic powder. Skin-side down over medium-high heat for 7 to 8 minutes until the skin is crispy. Flip and cook another 8 to 10 minutes until the internal temperature hits 175 degrees. Done.
Flank Steak (12 minutes)
Season a flank steak with salt and pepper (or your favorite rub) and grill over high heat for 5 to 6 minutes per side. Rest for 5 minutes and slice thin against the grain. Serve in tortillas, over rice, or just by itself. The whole process from grill to plate is under 20 minutes.
Italian Sausage and Peppers (20 minutes)
Put sausage links on the grill over medium heat. Toss sliced peppers and onions in oil and season with salt. Grill the vegetables in a basket or on a cast iron pan alongside the sausages. Everything finishes around the same time. Pile it on a hoagie roll if you want the full experience.
Shrimp Skewers (8 minutes)
Peel and devein a pound of shrimp, toss with olive oil, garlic, salt, and red pepper flakes. Thread onto skewers (or use a grill basket). Grill over high heat for 2 to 3 minutes per side until pink and slightly charred. This is the fastest protein you can grill, and it tastes incredible with a squeeze of lemon.
Pork Chops (15 minutes)
Thick-cut bone-in pork chops, seasoned generously. Sear over high heat for 3 to 4 minutes per side, then move to the cool zone to finish until internal temperature hits 145 degrees. Rest for 3 minutes. The two-zone method turns a simple pork chop into something that tastes like you spent an hour on it.
The Weeknight Mindset
Weeknight grilling is not about impressing anyone. It is about eating better food than takeout in the same amount of time. You do not need a plan. You do not need a recipe. Season some protein, get the grill hot, cook it, eat it. The fire does most of the work.
And here is the secret benefit nobody talks about: standing outside next to a grill for fifteen minutes after a long day is better therapy than sitting on the couch scrolling your phone. The fire, the smell, the simplicity of it. That alone makes weeknight grilling worth doing.
